Tonka Sarrapia is what happens when Delphine Jelk and Thierry Wasser take a single pillar of the Guerlinade and blow it up to its absolute limit. It belongs to Les Extraits Signature, the collection that isolates the six raw materials behind Guerlain's house signature, and 75 is the tonka bean's number: the coumarin content of the bean from the sarrapia tree, up to 75 percent.
Bitter almond and coumarin open it nutty and dry, closer to marzipan than dessert. Then the tonka itself takes over, dense and powdery and enormous, with a vintage soapiness underneath that keeps it from reading like a candle. Then vanilla, cacao, and hot spices push it into something that borders on edible. Ten to twelve hours easily, and it will still be on your shirt days later.
